STRAWBERRY BITES

Ingredients
- 1 Cup Frozen Strawberries
- 1 Cup Oats
- ½ Cup Sunflower Seeds
- ½ Cup Coconut Flour
- 2 TBSP Coconut Oil
- ½ Cup Desiccated Coconut
- Honey or maple syrup (optional for extra sweetness)
Directions
- Place first 4 ingredients in a food processor with 1 TBSP of the coconut oil.
- Blend until it becomes a fine paste and forms a ball. If mixture looks dry, add remaining coconut oil a small amount at a time until fine paste is achieved.
- Scoop into balls using a teaspoon (should make approximately 30).
- Roll each one gently by hand and then roll into desiccated coconut.
- Refrigerate for two hours or overnight (can be frozen or refrigerated for up to 3 days).
